At this time of year, the traditional jam\u00f3n de navidad<\/em> is everywhere, whether on a stand being sliced or hanging from the ceiling as complete legs. <\/span><\/p>\n

I remember once, shortly after we\u2019d moved here, seeing hams in Mercadona for around \u20ac35 and a week later, in El Corte Ingl\u00e9s, seeing what I thought was a leg for the same price and being surprised they weren\u2019t much more expensive in such a shop. But no, it was \u20ac35 a kilo rather than for the whole leg! <\/span><\/p>\n

These things can cost hundreds of Euros at the top end of the price range. There is, needless to say, a great variety on offer to account for these varying prices, and I hope the following will be helpful to anyone who isn\u2019t familiar with this archetypal Spanish Christmas tradition.<\/span><\/p>\n

Types of  Jam\u00f3n<\/span><\/h2>\n

There are two main types of Jam\u00f3n, Ib\u00e9rico and Serrano, with Ib\u00e9rico being considered the far superior, partly because Serrano ham is much more intensively farmed, and partly because it\u2019s cured for between just 7 and 16 months compared to what c<\/span>an be up to 3 years for Ib\u00e9rico. <\/span><\/p>\n

Of the ham produced in Spain, 90% is Serrano, and only 10% Ib\u00e9rico, and most experts would say that Iberico\u2019s taste and texture is far better \u2026 <\/span><\/p>\n

and although I\u2019m not remotely an expert, I would agree, and think that anyone experiencing a sliver of Ib\u00e9rico simply melting on the tongue would agree too.<\/span><\/p>\n

Within the Ib\u00e9rico range, the choice is between the following:<\/span><\/h2>\n

The amazing Jam\u00f3n Ib\u00e9rico de Bellota<\/em>: top of the range, indeed free <\/em>range pigs, acorn fed. Jam\u00f3n Ib\u00e9rico de Recebo<\/em>: Mixed-fed pigs \u2013 acorns, natural grazing and mass-produced feed. <\/span><\/p>\n

Wonderful Jam\u00f3n Ib\u00e9rico de Cebo<\/em>: grazed pigs also fed mass-produced feed. Jam\u00f3n Ib\u00e9rico de Cebo de Campo<\/em>: free range grazed pigs also fed mass-produced feed.<\/span><\/p>\n

Once you\u2019ve chosen the type, you have to choose the part \u2026 and here you can choose between a jam\u00f3n and a paleta. <\/span><\/p>\n

Both are commonly known as jam\u00f3n, and both will be displayed in the same stands, often next to each other, and at first glance the only difference will appear to be price. <\/span><\/p>\n

Properly speaking, however, the jam\u00f3n is the back leg, whereas the paleta is the front. <\/span><\/p>\n

The difference can be likened to that between the meatiness of a leg of lamb and the fatty sweetness of a shoulder. <\/span><\/p>\n

For me, this is the real difference between the jam\u00f3n and paleta, the choice being purely a matter of taste. <\/span><\/p>\n

For those who just cannot see themselves getting through a whole jam\u00f3n, or who just want a taster, most supermarkets sell vacuum packs of small quantity using the same terminology as for whole legs. <\/span><\/p>\n

They work out to be relatively expensive, but for just a taste of such a fantastic meat, Christmas<\/a> might make it worth it! <\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t
